I created this recipe for Thanksgiving lunch at our church and it was a hit!

Steps:
- 1. FOR THE CRUST: Blend crushed crackers and melted butter together and press into a springform pan.
- 2. FOR THE FILLING: Mix all ingredients together and beat until smooth. Pour filling over crust and bake in a 300 degree oven for 55 minutes or until set. Cool on a wire rack for about 45 minutes or until cool. Refrigerate for 2 to 3 hours uncovered. Pour on caramel sauce and serve. Cover and refrigerate uneaten protion.
- 3. FOR THE CARAMEL: Stir until well combined and pour over cooled cheesecake. Refrigerate.
