Categories     Potato     Side     Quick & Easy     Boil

Yield 4-6 servings

Number Of Ingredients 6

3 pounds red potatoes, with skins
2 cups mayonnaise
3 tablespoons sour cream
Juice of ½ lemon (use a juicer and a lemon at room temp to get a good amount of juice)
1 ¼ teaspoon Old Bay Seasoning
3 tablespoons fresh cilantro, chopped

Steps:

  • Do not peel potatoes. Cut potatoes into 1 inch pieces. Put them in a large pot and add cold water, until the potatoes are just covered. Cover the pot with a lid, and bring to a boil over medium heat. Over medium heat, this can take about 20-25 minutes. While potatoes are boiling: In a large bowl, whisk together the mayonnaise and sour cream, until well blended. Add the Old Bay Seasoning and mix well. Add the lemon juice, and mix quickly and thoroughly, so the mixture doesn't curdle. Set the mayonnaise mixture aside. As soon as water boils, remove the lid and reduce heat to a gentle simmer. Simmer the potatoes until they are very soft, about 15-20 more minutes. Drain potatoes and let them cool for several minutes, then add them to the mayonnaise mixture, and mix well. Add the chopped Cilantro and mix. Serve warm, or chill in the refrigerator.

The potatoes in my salad were undercooked. I would recommend boiling them for a few minutes longer.

This salad is way too spicy for my taste. I would recommend using less chili powder.

I followed the recipe exactly, but my salad turned out too watery. I think I might have used too much lime juice.

This salad is a bit bland for my taste. I would add more salt and pepper, and maybe some chopped onion or celery.

I'm not a huge fan of cilantro, but I still really enjoyed this salad. The flavors are well-balanced and the potatoes are cooked perfectly.
