David's Crock Pot Roast or Stew image

This dish can be made much easier by not browning anything,but the flavor will not be near the depth of flavor it has by doing the complete process. At least browning the meat and sweating the aromatics will greatly add to the flavor. You can even make this easier by just using the roast, the onion soup mix and beef broth along...

4-5 qt roast, beef, venison, pork they all work with this recipe
2-3 Tbsp canola oil
2-3 large containers beef stock
2 pkg french onion soup mix
3 medium onions, yellow, medium
3-4 medium carrots, chopped
3-4 stalk(s) celery
4-6 medium potatoes, new red halved and quartered
1/2 lb sliced mushrooms
1/2 tsp thyme, dried
1/2 tsp parsley flakes
1/2 tsp rosemary, dried
1/2-1 tsp pepper to taste note: personally i wouldn't add too much salt as the broth and onion soup mix has quite a bit.
1 tsp garlic powder with parsley
OPTIONAL
1 can(s) green beans
1 can(s) sweet peas
1 can(s) corn canned

Steps:

  • 1. Set the crock pot on medium to bring up the temperature.
  • 2. Put 1 tablespoon of canola oil in a heavy pot and bring to a hot heat and sear the roast on all sides. With a med- high heat should take about 5 minutes. After browned place in the crock pot and cover.
  • 3. Next sweat all of the onions, celery, carrots, potatoes, garlic, should take about 5 minutes. Add to the crock pot.
  • 4. Using the same pot you browned the onion, celery potatoes and garlic in, turn the heat to low and mix the beef stock, onion soup mix, add the mushrooms and all of the seasoning. After 2 minutes of mixing pour over the contents of the crock pot. NOTE: ( if you have decided to add any green beans, corn etc drain them and add to this now, before adding to the crock pot. Should take about 3-5 minutes Place in the crock pot over the roast and cover.
  • 5. Continue to cook in the crock pot at a med heat for about 6-8 hours.
  • 6. Place on a serving platter and dig in!
  • 7. To make this dish EASY just put everything in the crock pot and let it cook. I would at the very east brown the meat and aromatics. Prep time will depend on which method you decide. I'll always recommend the long version if you have the time. The results are so much better in the finished dish!
