Steps:
- Filling: Place first 3 ingredients into a saucepan and cook till thick( 8-10 minutes). Now add the lemon juice and butter and let cool. Cookies: Mix the dry ingredients. Cream the butter and sugar till light, add the egg and vanilla. Now alternately add the flour and milk. Chill. Roll out the dough to 1/9 th inch and cut with a 21/2" round cutter. Optional, you may choose to cut half of the rounds with a decorative cutter such as a heart or star like you would for linzer cookies. To form place 1 tsp filling in center of cookie and place another on the top. With a fork seal the edges. Bake @ 375* for 10-12 minutes. May dust with powdered sugar.
