I made some last night and thought I would share with you my own recipe Most recipes suggest to put sugar along with the dates, but I don't add sugar, dates are sweet enough!! These were also a big hit when I had my catering service and was one of Ottawa's most famous Gelato store's Piccolo Grande's best seller!!!

1 1/2 c water or more as needed
CRISP
2 c rolled oats, quick-cooking
1 1/4 c all-purpose flour
1 c brown sugar
1/4 tsp baking soda
1 c butter or margarine (butter is the best!))

  • 1. Directions: 1. Place rack in center of oven. Preheat oven to 350F. Line a square baking dish 20 cm (8 inches) with parchment paper or just grease your dish with butter.
  • 2. Filling 1. In a saucepan, boil the dates and water and simmer for about 5 minutes, stirring constantly with a wooden spoon until the dates are pureed. Let cool.
  • 3. Crisp: 1. In a bowl, combine oats, flour, brown sugar and baking soda. Add butter and mix well. 2. Spread half of the crisp in the pan and press firmly. Spread the date mixture. Cover with remaining crisp and press lightly. Bake about 35 minutes or until crisp is golden brown. Cool on a wire rack, remove from pan and cut into 16 squares.
