Danforth Salad image

This delightful salad is the perfect pairing for a BBQ. We love it with applewood smoked ribs and a cool gin cocktail (a white lady is the best). It's a Mediterranean-inspired Toronto summer classic, named after Danforth Avenue, which is home to a large Greek community. Not sure when it was invented, but we ate it all the time growing up in north Toronto in the 1980s. Yummy.

2 mini cucumbers, cut into 1/2-inch pieces
½ mini watermelon, cut into 1/2-inch pieces
1 cup fresh strawberries, hulled and quartered
½ cup crumbled feta cheese, preferably Bulgarian
½ cup chopped fresh mint, plus more for garnish
1 tablespoon chopped fresh basil
1 Persian lime, juiced
¼ cup chopped toasted walnuts

Steps:

  • Combine cucumber, watermelon, strawberries, feta cheese, mint, and basil in a bowl; carefully mix to combine. Squeeze lime juice on top. Sprinkle salad with walnuts and garnish with additional mint leaves before serving.

I'm not a big fan of corn salad, but this one is really good! The dressing is light and flavorful, and the corn is perfectly cooked.

This salad is a great way to use up leftover corn. I always have some leftover corn after I make corn on the cob, and this is a great way to use it up.
