Dairy-Free Crepe and Blintz Filling image

Use this filling with sweet, paper thin crepes (I recommend Ann's 'Dessert Crepes' recipe here on allrecipes) and fruit for a satisfying weekend breakfast! Serving Suggestions: Fill slightly cooled crepes with the creamy mixture and top with fruit and whipped cream.

1 (8 ounce) container vegan cream cheese substitute (such as Tofutti™)
2 tablespoons white sugar
1 teaspoon vanilla extract
1 ½ tablespoons coconut milk

Steps:

  • Combine the cream cheese substitute, sugar, vanilla extract, and coconut milk with an electric mixer until smooth and creamy.
