Dairy-Free Apple French Toast image

These are not your average Eggo® French toast. This is spiced apple French toast, dairy free. Very easy and quick to prepare. Enjoy!

4 large Granny Smith apples - peeled, cored, and sliced
3 tablespoons white sugar
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cumin
1 tablespoon lemon juice, or as needed
2 cups plain soy milk
½ cup apple butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon salt
12 (1/2 inch thick) slices soft-crust French bread

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a baking sheet with cooking spray.
  • Coat a nonstick skillet with cooking spray and heat over medium-high heat. Saute apples until softened, 5 to 7 minutes. Reduce heat to medium. Add sugar, cinnamon, nutmeg, and cumin and cook until tender, stirring occasionally, 5 to 10 minutes more. Stir in lemon juice and remove from heat.
  • Blend soy milk, apple butter, vanilla extract, cinnamon, and salt together in a blender until smooth. Pour into a shallow bowl.
  • Coat a nonstick skillet with cooking spray and heat over medium heat. Dip bread slices into soy milk batter, coating evenly. Cook in the skillet until lightly browned, 1 to 2 minutes on each side. Transfer bread to the prepared baking sheet.
  • Bake in the preheated oven until golden brown, about 4 minutes.
  • Place 2 slices of bread onto each serving plate and divide topping among servings.
