1 large onion, chopped
3 cloves garlic, crushed
1 bay leaf
1 T olive oil
1 c red lentils (can sub others)
2 t curry powder
1 t tumeric
3 cups veg stock (+)
1 c chopped sweet potato (+)
1/2 red pepper chopped
1/2 c coconut milk
2 c chopped spinach

Steps:

  • -1- Fry onion, garlic ginger & bay leave -2- Add lentils, curry, tumeric - fry 2 min -3- Add stock, potato, pepper, milk cook 30 min stirring occasionally -4- Add spinach and cook for 2 min more
