CURRY RAISIN CHICKEN SALAD image

4 boneless, skinless chicken breasts (precooked and cut into 1 inch cubes)
1 cup celery, chopped
1 8-ounce can water chestnuts, drained and chopped
1/2 cup green onion, chopped with tops
1 cup seedless red grapes, halved
1 cup dark California Raisins
1/3 cup almonds, slivered
1 cup light mayonnaise
1 teaspoon soy sauce
1 tablespoon lemon juice
1 1/2 teaspoons curry powder
2 tablespoons prepared chutney
salt to taste

Steps:

  • In large bowl, combine chicken, celery water chestnuts, grapes, raisins, green onion, and almonds. In a separate bowl, combine mayonnaise, soy sauce, lemon juice curry powder, and chutney. Pour this dressing over chicken mixture, and gently toss. Add salt if needed.
