CURRIED SWEET POTATO WEDGES image

2 pounds sweet potatoes
1 tablespoon canola oil
2 teaspoons curry powder
½ teaspoon salt
1 pinch cayenne pepper

Steps:

  • Preheat oven to 450 degrees. Cut sweet potatoes into long strips (8 pieces/potato). Toss with oil, curry powder, salt and cayenne in a large bowl. Arrange potatoes in a single layer on a baking sheet. Bake, turning once, 35-40 minutes or until golden brown and crisp.
