Curried Fruit - Joyce's Recipe Shared image

My favorite sister-in-law, Joyce, is a wonderful cook, fun to be with, generous and a hard working mom! She loves to entertain, and when she does "she pulls out all the stops and cooks up the most attractive and delicious food". Here is one recipe that I think is easy and also special, and a tasty addition to any holiday meal...

1 can(s) 14 oz. ,pineapple, cubes, drained reserve juice
1 can(s) 14 oz., peach halves, drained
1 can(s) 14 oz., apricots, drained
1 can(s) 14 oz. pears, drained
1/2 c light brown sugar
1/2 stick butter
3 tsp curry powder

Steps:

  • 1. Drain all fruit and reserve 1/2 cup fruite juice. Place all fruit in a casserole, and preheat oven to 350 degrees.
  • 2. Combine brown sugar, butter and curry with juice in a saucepan, bring to a boil. Pour over fruit in the casserole and bake for 30 minutes. Serve with a slotted spoon. It goes well with chicken, fish or ham.
