4 cucumbers, peeled cut in quarters lengthwise then cut into small wedges, if using English cucumbers, no need to
1 cup low fat or 1 cup fat free sour cream
1/2 teaspoon celery seed
1 tablespoon chopped fresh chives
2 tablespoons chopped fresh parsley
salt & freshly ground black pepper

Steps:

  • Combine all ingredients, except cucumber, in a bowl and mix to combine.
  • Then add cucumber and mix together.
  • Refrigerate 1/2 hr or more to combine flavors.
