Cucumber and Onion Salad image

This is a side dish that was first made by my great grandmother, handed down through the generations and now made by me, sometimes with my own granddaughter. Number Of Ingredients 8

15 small kirby cucumbers
1 large vidalia onion
1 c water
1 c vinegar
1/2 c sugar or sugar substitute
1 tsp salt
1/2 tsp white pepper
4 tsp oil

Steps:

  • 1. Peel cucumber and thinly slice. Slice onion very thin. Mix other ingredients in large bowl with waterproof, tight lid or waterproof storage container.
  • 2. Mix all ingredients together and place in refrigerator. Stir or toss container to stir several times a day for 2 or three days until cucumbers and onions are mellow and pickled. Serve as a side dish.
