This is delicious! and a staple in my home. Because it is crustless it is low in carbs. It is very easy to make and everyone just loves it!!! You can substitute broccoli for the spinach but my family prefers the spinach.

Steps:
- 1. Preheat oven to 350
- 2. Heat oil in fry pan & add onion. Squeeze excess liquid from spinach and add to pan. Cook for approx. 10 minutes on medium and remove from heat to cool.
- 3. In large bowl whisk the eggs. Stir in the cheese and then the cooled spinach/onion mixture. Add salt & pepper to taste.
- 4. Spray a 9" pie pan with Pam. Add the mixture to the pan, even it out, and bake for 40 minutes.
