Crustless Spinach Quiche (3 Cheese) image

This is a delicious, easy meal to throw together. Perfect with a salad and fresh fruit. This serves 4 as a main course with large portions.

12 ounces fresh spinach, chopped
1/2 onion, diced
1 tablespoon olive oil
1 -2 tablespoon chicken broth or 1 -2 tablespoon water
1/2 cup flour
1 cup milk
1/8 teaspoon nutmeg
1/4 teaspoon black pepper
1/2 teaspoon salt
6 eggs
1 cup cottage cheese
1 cup shredded cheese
1/2 cup feta cheese

Steps:

  • Preheat the oven to 375.
  • Heat oil in a skillet, add onion, saute until soft.
  • Add fresh spinach and chicken broth (or water) and toss until wilted but not mushy.
  • whisk flour with milk until smooth.
  • Add nutmeg, salt and pepper.
  • Whisk in 6 eggs.
  • Stir in all cheeses with the spinach and onion mixture.
  • Pour everything into a greased 8x8 or 9x9 baking dish.
  • Bake 45-55 minutes until puffed up and set.
