This soup is delicious and healthy, and it's also very easy to make. I love that it's a one-pot meal, which makes cleanup a breeze. I've also found that it freezes well, so I often make a big batch and freeze half of it for later.

I've made this soup several times now, and it's always a hit. It's a great way to use up leftover lentils, and it's also very affordable. I like to serve it with a side of crusty bread or rice.
