This is a great summertime recipe. The secret ingredient (not so secret anymore!) adds a great flavor.

Categories     Side Dish     Vegetables     Green Beans

Time 40m

Yield 8

Number Of Ingredients 9

½ pound bacon
1 ½ pounds fresh green beans, trimmed
1 small onion, diced
5 cloves garlic, chopped
2 tablespoons butter
garlic salt to taste
Italian seasoning to taste
ground black pepper to taste
1 (4 ounce) package flavored tortilla snack chips (such as Doritos®), crushed

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, 10 to 12 minutes. Drain bacon slices on paper towels. Reserve 1/4 cup bacon grease in the skillet; discard remainder.
  • While the bacon is cooking, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add beans, cover, and steam until tender, 2 to 6 minutes. Drain and set aside.
  • Add onion and garlic to the skillet with the reserved bacon grease. Cook over medium heat until the onion has softened and turned translucent, about 5 minutes. Stir in butter until melted. Add green beans, garlic salt, Italian seasoning, and pepper; toss until combined. Mix in crushed chips.

I'm a vegetarian, so I omitted the bacon. The green beans were still delicious.

I'm allergic to bacon, so I used turkey bacon instead. It worked out great!

This recipe is a little too salty for my taste. I think I'll use less bacon next time.

I'm not sure what I did wrong, but my green beans turned out soggy. Maybe I didn't cook them long enough?
