Crumb Topped Lingonberry Pie image

This pie has just the right amount of sugar and a nice tartness.

1/2 c butter,softened
1 Tbsp butter, softened
2/3 c sugar
1 1/2 c flour
1 tsp baking powder
1 egg
13 1/2 oz lingonberries, thawed and drained
7 Tbsp sugar
1 Tbsp cornstarch
1/2 c oatmeal, uncooked
2 Tbsp oatmeal, uncooked
7 Tbsp sugar
1 tsp vanilla
4 Tbsp butter, cut into cubes

Steps:

  • 1. Preheat oven to 350 F.
  • 2. To make Crust: First mix 1/2 C + 1 T softened butter and sugar. Add flour, baking powder, and egg. Quickly mix to form a ball. .
  • 3. Press the dough on the bottom and sides of a pie plate
  • 4. .For Filling: combine lingonberries, sugar and cornstarch and mix well. Spread the filling in the pie plate..
  • 5. For Topping: Combine 1 1/2 C+2 T oatmeal, sugar, and vanilla. Sprinkle on top of the berries. Top with the butter cubes.
  • 6. Bake for 30-35 minutes. Allow to cool completely
