Crockpot Green Rice Casserole image

My mom used to make this for us when we were kids, and it was by far my favorite veggie dish, and now it's my kid's too! Next time you make a rice dish, make extra to use for this recipe. Number Of Ingredients 9

1 1/2 c evaporated milk
1/4 c melted butter
1/4 c chicken broth
3 eggs
3 c cooked brown rice
1 c parsley, chopped
2 box frozen chopped spinach (thawed, squeezed & drained)
1/2 c green onions
1 c parmesan cheese

Steps:

  • 1. Combine milk, butter, broth and eggs. Beat until frothy.
  • 2. Stir in remaining ingredients and pour into crockpot.
  • 3. Cook on high for 1 hour. Then turn to low and cook another 4-6 hours.
