Steps:
- 1. Soak beans overnight.
- 2. Rinse beans and put in the crock pot and cover with water. Add all chopped celery and onion, garlic & onion powder, creole seasoning, bacon grease bay leaves. Turn slow cooker on high.
- 3. Cook beans for 3-4 hours. Add smoked sausage and ham.
- 4. Turn the heat to low and cook for another hour or so until beans are tender and liquid has thickened.
- 5. Ladle red beans over hot cooked white rice.
