CREOLE LIMA BEANS image

Yield Makes 8 one cup servings for a side dish.

Number Of Ingredients 9

1 T. olive oil
1 stalk of celery, diced
1 onion, diced
1 green pepper, diced
16 oz. pkg. frozen lima beans, thawed
1 14oz. can of stewed tomatoes, broken
1/4 t. ground thyme
1 T. pickled hot cherry peppers, chopped
10 dashes of chipotle pepper sauce

Steps:

  • Heat oil in a sauce pan. Add the celery, onions, and green pepper and saute until tender. Add the tomatoes,thyme, hot cherry peppers, and lima beans. Simmer for 15 minutes
