Creamy Poblano Chicken With Cornbread Waffles image

I had this at a dinner party, and it is sooooo delicious! Creamy chicken with just a bit of heat, served atop crunchy cornbread waffles. Comfort Food! If your chicken breasts are on the large side, 6 will work nicely. This can be made ahead, simply reheat the chicken mixture and warm the waffles!

The waffles were a bit too dry for my taste. I think I'll try adding some more liquid next time.

I'm not sure why, but the chicken didn't come out very tender. I followed the recipe exactly, but the chicken was still a bit tough.

I'm not a big fan of poblano peppers, but I really enjoyed this recipe. The chicken was so tender and flavorful that it made up for the peppers.
