Creamy Orzo image

This is the side dish that I often serve with my Greek Style Broiled Chicken Breasts.

Number Of Ingredients 8

4 /2 c chicken broth
1 1/2 c orzo pasta
6 Tbsp sun-dried tomatoes, oil packed, minced
6 Tbsp feta cheese, crumbled
1/2 c flat leaf parsley, chopped
1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
8-10 kalamata (greek) olives, cut

Steps:

  • 1. Bring broth to a boil; stir in orzo. Return to a boil. Cook orzo, uncovered, stirring occasionally, until the liquid is absorbed, 9 minutes. Remove saucepan from heat.
  • 2. Stir in tomatoes, parsley, olives and feta, mixing until the feta begins to melt slightly. Season with salt and pepper.
