Number Of Ingredients 10

2 heads garlic, roasted
½ tsp. kosher salt
1//4 tsp pepper
2 tsps. Anchovy paste
1 tbsp. whole grain mustard
1 egg yolk, coddled
1 tbsp. lemon juice
1 tsp. Worcestershire sauce
1/2 cup oil
1 tsp. red wine vinegar

Steps:

  • Mash the roasted garlic with the salt and pepper to form a paste. Add the anchovy paste, whole grain mustard, egg yolk, lemon juice and Worcestershire sauce one at a time, mashing each time so that in the end you have a relatively smooth paste. Transfer the paste to a food processor, turn on and slowly drizzle in all the oil. At the end, drizzle in the red wine vinegar and blend for an additional 10 seconds. Place in the refrigerator until ready to use and to allow the flavors to meld together.
