Cream Cheese Frosted Gingerbread Men image

Every Christmas, my family would visit a display of the most amazing gingerbread houses. Of course, we'd get to munch on gingerbread cookies along the way! I created my recipe with fresh grated ginger and cream cheese icing-it's the perfect mix of sweet and spicy. -Rebekah Jackson, San Jose, California

I love the way these gingerbread men look, but I wasn't a huge fan of the taste. I think I'll try a different recipe next time.

I had a little trouble getting the gingerbread dough to roll out. I think I needed to chill it for longer.

The frosting was a little too sweet for me, but the gingerbread men themselves were delicious.

These gingerbread men were a little too dry for my taste. I think I'll add a little more molasses next time.

I'm not a huge fan of gingerbread, but these cookies were surprisingly good. The cream cheese frosting really makes them.

This recipe is a great way to use up leftover cream cheese. I always have a container in my fridge, so it's nice to have a recipe that uses it up.
