Steps:
- 1. Spray a large casserole with nonstick oil. Place half the fillets on bottom of casserole.
- 2. Saute' onion in oil. Add lemon juice, cranberries, sugar, orange juice and salt. Simmer for 25 minutes.
- 3. Preheat oven to 350 degrees F. In mixing bowl combine cranberry sauce with parsley, cooked rice and beaten egg. Spread mixture over haddock fillets. Place remaining fillets over cranberry mixture. Brush with oil, sprinkle with paprika. Bake 35 minutes.
