Cranberry-Cashew Drop Cookies image

1 c butter, softened
1 c brown sugar, packed
1/2 c white sugar
2 eggs
1 tsp vanilla extract
2 1/4 c all purpose flour
1 tsp baking soda
1 tsp salt
1 pkg white chocolate baking chips, 10-12 oz.
1 c chopped cashews
1 c dried cranberries

Steps:

  • 1. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Preheat oven to 350 degrees.
  • 2. Combine the flour, baking soda and salt and gradually add to the creamed mixture and mix well.
  • 3. Stir in chips, cashews, and cranberries.
  • 4. Drop by rounded taplespoons about two inches apart onto an ungreased baking sheet.
  • 5. Bake at 350 for 9-11 minutes or until golden brown. Remove to wire rack to cool.
