Cranberry-Almond Broccoli Salad image

Number Of Ingredients 11

1/4 cup red onion, finely chopped
1/3 cup mayonnaise (light is fine)
3 tablespoons Greek yogurt, 2%
1 tablespoon honey
1 tablespoon champagne vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
4 cups broccoli, coarsely chopped, cooked to al dente, and chilled (microwave 3 minutes)
1/3 cup slivered almonds, toasted
1/3 cup dried cranberries
4 slices bacon slices, cooked and crumbled

Steps:

  • Combine mayo, yogurt, vinegar, honey, salt, pepper. Whisk together. Store dressing in glass jar in 'frig until ready to use (can make days in advance)
  • Store onion, bacon and broccoli separately in 'frig until ready to use.
  • Mix broccoli, onion and bacon. Add dressing, and serve.
