I'm a vegetarian, so I made this recipe with tofu instead of crab. It turned out great! The tofu absorbed the flavors of the mushrooms and blue cheese perfectly. I will definitely be making this again.

I made this recipe with a few healthy substitutions. I used low-fat blue cheese and crab, and I sautéed the mushrooms in olive oil instead of butter. The dish was still very flavorful, but it was also healthier.
