Cowboy Caviar image

Never did like like those little fish eggs...just couldn't seem to acquire a taste for it so I have found ways to make "caviar" without it!! I'm dragging out all my entertainments recipes today and pulling my favorites...hope you all like them too!!!

Number Of Ingredients 11

2 Tbsp red wine vinegar
1/2 tsp up to 2 tsp frank's red hot sauce
1 clove medium garlic , minced
1 dash(es) pepper
1 can(s) 15 oz black beans, drained
1 can(s) 11 oz corn , drained
1 ripe avocado , chopped approx 1 - 1 1/2 cups
1 c chopped tomatoes
1/4 c sliced scallions, white and green parts
1/4 c fresh cilantro, chopped
tortilla chips

Steps:

  • 1. Mix together the first 4 ingredients with 2 tsps olive oil, whisk well and set aside. Combine the rest of the ingredients (not tortillas)and gently stir to combine. Pour the dressing on top and stir just enough to coat. Spoon into a glass bowl and refrigerate covered until ready to serve.
  • 2. Great served with grilled chicken or fish too.
