COUSCOUS WITH DRIED FRUIT AND PINE NUTS image

Number Of Ingredients 7

1 1/2 C water
2 T olive oil or unsalted butter
Salt
1 C quick cooking couscous
1/3 C chopped mixed dried fruit
1/4 c chopped fresh mint, flat leaf parsley, or cilantro or a combination of these
3 T pine nuts, toasted

Steps:

  • 1. Boil water, oil (or butter) and 1/2 t salt. Turn off heat and stir in the couscous and dried fruit. 2. Cover and allow water to be absorbed (about 15 minutes). 3. Fluff couscous and stir in herbs and pine nuts. Serve hot or warm.
