Steps:
- Heat the oil in a medium-sized pot over medium heat. Add the onions and cook until tender, 4 to 5 minutes. Add the cumin and ginger and cook 1 minute more. Add the stock and mandarin orange juice. Turn up the heat to high and bring to boil. Stir in the pecans, cranberries, mandarin oranges, salt, pepper and couscous. Cover, turn off the heat and let stand 5 minutes. Stir in the parsley and serve, or cool to room temperature and then cover and store in the fridge untl needed. Reheat in the microwave or place in a shallow sided, heatproof dish, add little stock or water to keep it moist, and cover and reheat in a 350 degree oven for 20-25 minutes.
