Country Ham With Redeye Gravy image

Number Of Ingredients 5

2 slice uncooked country ham (1/4-inch thick)
2 Tbsp vegetable oil
1 c strong black coffee
2 Tbsp all purpose flour
1/2 tsp paprika

Steps:

  • 1. Cut gashes in fat to keep ham from curling. Saute ham in oil in a heavy skillet over low heat 3 to 4 minutes on each side. Remove the ham from skillet, and keep warm.
  • 2. Combine coffee and flour; add to pan drippings, stirring constantly, until thickened. Add paprika. Serve with ham.
