COUNTRY GREEN BEANS image

1 pound green beans
1/3 red bell pepper, skin peeled & minced
1 clove of garlic, minced
1 small onion, finely chopped
7 oz bacon
2 tbsp flour
1 tsp mustard powder
1 1/2 cup beef broth
pepper
salt

Steps:

  • Parboil the beans, 3-5 min(?) or until "al dente". Drain & rinse them in cold water. Meanwhile, mix 2 slightly heaping tbsp flour with 1 tsp mustard powder and give it a good stir. Heat 2 tbsp butter. Cook the onions in butter over low heat for about 5 minutes while stirring occasionally. After 5 minutes add bell pepper and garlic and cook for another 5 minutes. Add the flour to the vegetables and cook for 2 minutes over low heat. Slowly whisk in the beef broth & cook until sauce is thick. Season with pepper to taste. Making bundles of about 5-6 beans at a time, dredge them through the beef sauce, coating beans generously. Wrap each bundle with a slice of raw bacon. Cook in a 400F oven about 10 minutes per side - if you cook in the oven, place on a rack so that grease can drip down, ensuring crisp bacon. OR Cook on the grill about the same length of time
