Costa Rican Rice image

Number Of Ingredients 10

1 Tbsp peanut oil
1/3 c diced red or green bell pepper
1/2 c diced onion
2 c long grain rice, well rinsed
1 1/3 c water
2 tsp tomato paste
1/4 tsp freshly ground black pepper
2 tsp salt
2 Tbsp freshly squeezed lime juice
1 tsp olive oil

Steps:

  • 1. Heat the peanut oil in a medium saucepan. Add the bell pepper and onion; cook over medium heat, stirring often, until the onion begins to brown.
  • 2. Add the rice, water, tomato paste, black pepper, salt, and lime juice; mix well. Bring the liquid to a boil.
  • 3. Add the olive oil to the rice mixture; reduce the heat, and simmer, covered and undisturbed, until all the liquid is absorbed, about 20 minutes.
  • 4. Serve hot.
