Cossack Salad image

Number Of Ingredients 12

1/2 cup french-style green bean cooked, cut in pieces
1/2 cup carrot diced cooked
1/2 cup frozen green peas cooked
1 cucumber small, cubed
6 radishes coarsely chopped
1/2 cup scallion trimmed and sliced (6 scallions)
2 ribs celery, coarsely sliced
2/3 cup mayonnaise
1 teaspoon lemon peel grated rind of lemon
1 tablespoon lemon juice fresh
Salt and pepper to taste
Lettuce, washed, fried and chilled

Steps:

  • 1. Toss all vegetables together. Mix mayonnaise, grated rind and juice of lemon and pour over vegetables. Sprinkle with salt and pepper to taste and let marinate at least a couple of hours before serving on a bed of lettuce leaves.
