GW had a rotissire when I moved in with him and didn't know quite what to make of it, so decided to give it a try. Everything comes out so pefect! We are talking crispy skin, tender and juicy on the inside. Basically a compound butter is butter with something else added in it. Fresh herbs are the bomb bc you cannot over do...

Steps:
- 1. Attach birds to the spit.
- 2. Melt butter, I use the defrost cycle of the microwave.
- 3. Stir in your herbs, you can experiment and use any combo of things you like, I especially like garlic, sage, and parsley.
- 4. Baste your birds generously with your compound butter and from time to time as they cook.
- 5. I really didn't time these, but when they are good and golden they are usually ready, say 1 1/2 hours.
