Cornbread Chicken image

This, as with many of my recipes, came from one of those moments where you are looking around your pantry saying "What the hell can I make with these things..." I think it came out really well and it stayed on the menu. I have tried oven baked and skillet fried versions and prefer the oven baked, as it is less greasy.

1 box your favorite cornbread mix
4 bonesless, skinless chicken breasts or 8 bonesless, skinless thighs
1/4 c water
2 Tbsp extra virgin olive oil

Steps:

  • 1. Mix about half the box of cornbread mix, water and olive oil with any seasonings you like. I use a little garlic powder and some pepper. Batter should be thick, almost like brownie batter.
  • 2. Dip chicken pieces into batter and place on sprayed pan or baking dish.
  • 3. Bake 45 minutes to an hour, until cooked through. Check for internal temp of 165 degrees.
  • 4. Allow to sit for about five minutes after removing from oven. Enjoy!
