Corn, Hominy, and Black Bean Taco Soup image

A nice, hearty soup, perfect for a cold day. Feel free to sprinkle the top of the bowl with shredded cheese and a dollop of sour cream. It's also good with crushed tortilla chips mixed in.

I found the soup to be a bit bland. I added some extra chili powder and cumin to give it more flavor.

The soup was a bit too spicy for my taste, but I was able to tone it down by adding some sour cream and avocado.

This soup is a great way to use up leftover corn and black beans. I always have some in my freezer, so it's easy to whip up a batch of this soup on a weeknight.
