Corn and Spinach Souffle image

This is an easy, foolproof souffle- you just need to make sure the vegetables and sauce are cool before adding the eggs. I've made this many times for guests and always receive compliments, even from people who don't like spinach.

This souffle was a bit too eggy for my taste. I think I would have preferred it with a bit more cheese or maybe some herbs. But overall, it was a good recipe and I would try it again with some modifications.
