Dip the chhicken in the egg mixture then into the dry coating mix and repeat so each piece is double coated. Preheat oil in a heavy skillet. Brown pieces skin side down for 10 minutes. Covered; using medium-high heat. Turn and brown other side, uncovered, for 10 minutes more
