Cookie Pie Crust image

This looks good; haven't tried it yet, but it looks good! This is from the Inn and Shadow Lawn Bed and Breakfast in Rhode Island.

Yield 1 crust

Number Of Ingredients 7

1 cup sifted flour
1/4 cup sugar
1 pinch salt
1 teaspoon grated orange zest or 1 teaspoon lemon zest
1/2 cup butter
1 egg yolk
1/2 teaspoon vanilla

Steps:

  • Combine flour, sugar, peel and salt in a bowl.
  • Cut in butter.
  • Stir in egg yolk and vanilla; mix till blended.
  • Press evenly into pie pan.
  • Bake at 400 degrees F about 10 minutes, or until golden brown.
  • Cool before filling.
