Time 25m

Number Of Ingredients 14

1/3 c brown sugar
2 Tbsp brown sugar
1 c white sugar
1 c unsalted butter (room temperature)
1 Tbsp fresh honey
2 eggs (room temperature)
1 tsp vanilla
1/2 c cocoa
3/4 tsp salt
1 tsp baking soda
2 1/4 c all purpose flour
2 c milk chocolate chips
3/4 c shredded coconut
1 c chopped pecans

Steps:

  • 1. Preheat your oven to 325 degrees. Place chopped pecans on cookie sheet and toast 8 minutes until it turns a golden brown in color, turning once after five minutes. After toasted, set the pecans aside and let them cool.
  • 2. Mix brown and white sugars together in bowl, add butter & mix until smooth. Slowly add honey, eggs, and vanilla until all ingredients are combined.
  • 3. In separate bowl sift together AP Flour, cocoa, salt, and baking soda. Add your chocolate chips, 1/2 cup toasted pecans and coconut to the dry mix . Add to the wet and mix until combined.
  • 4. Scoop out cookies of desired size onto parchment lined cookie sheet. (I normally use a 1 1/2" scoop). Top each cookie with a few chopped pecans. Bake 10-12 minutes, rotating pan after 6 minutes.

I had trouble finding German chocolate chips. I ended up using semisweet chocolate chips instead.

The cookies were a bit dry. I think I would add a little more butter next time.

I found that the cookies were a bit too sweet for my taste. I would reduce the amount of sugar next time.

I was a bit skeptical about making these cookies because I'm not a huge fan of coconut, but I'm so glad I did! The coconut flavor is very subtle and it pairs perfectly with the chocolate.
