Congo Squares image

This recipe is mixed on top the stove, all in one pan and baked. I try to cut down on the amount of sugar in most of my recipes so for this one: I use 2 cups of brown sugar, the recipe calls for 2 1/4 cups. I also decrease the flour by 2 tablespoons and salt by 1/4 teaspoon.

2/3 c shortening
2 1/4 c brown sugar, firmly packed
2 3/4 c all purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
3 eggs, beaten
1 Tbsp vanilla extract
2 c semi-sweet chocolate chips
1 c nuts, chopped

Steps:

  • 1. Combine flour, baking powder and salt, set aside.
  • 2. Melt shortening, stir in brown sugar. Cool slightly.
  • 3. Add dry ingredients gradually with eggs.
  • 4. Stir in rest of ingredients.
  • 5. Put into a greased and floured 9x13 pan and bake at 350 degrees for 25-30 minutes.
