Confetti Scalloped Potatoes image

3 lb potatoes, peeled and sliced 1/4 inch thick
1 large onion, diced
1 jar(s) medium jar chopped pimentos, drained
1 green pepper, diced
1 c shredded american cheese
1 can(s) cream of mushroom soup
1/2 tsp celery salt
1/4 tsp pepper
1/4 tsp salt

Steps:

  • 1. Arrange several layers of sliced potatoes, diced onions, chopped pimentos, diced green peppers and shredded cheese, ending with a layer of sliced potatoes and cheese on top.
  • 2. Combine 1 cup hot water with the cream of mushroom soup, celery salt, salt and pepper. Pour over the potatoes.
  • 3. Oven to 350 degrees. COVER and bake for 1 and 1/2 to 2 hours until tender and thickened.
