Confetti Lentil Soup image

Lentil soup is one of my favorites, but my husband has not been a fan in the past. This recipe added the ground beef, and beef flavoring and he thought that was a great improvement. This is great with a big skillet of buttermilk cornbread, and a side salad.

I love that this soup is so versatile. You can add or remove ingredients to suit your taste. I like to add a bit of spice to mine, but you can leave it out if you don't like spicy food.

This confetti lentil soup was a hit with my family! The lentils were cooked perfectly and the vegetables were still slightly crunchy. The broth was flavorful and had a nice depth of flavor. I would definitely make this soup again.
