CONFETTI BEAN SALAD image

Number Of Ingredients 12

1 16 oz. can red kidney beans, rinsed and drained
1 15 oz. can chick peas, rinsed and drained
1 14 1/2 oz. can Italian diced tomatoes, drained
1 1/2 cups frozen peas
1 1/2 cups frozen corn
1/2 cup onion, chopped
1/2 cup green pepper, chopped
3 tbsp. cider or red vinegar
2 tbsp. olive oil
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper

Steps:

  • In large bowl mix all vegetables. In jar mix dressing ingredients. Pour over bean mixture and toss gently. Cover and refrigerate at least four hours.
