My mother came from Ireland as a teen and brought this homey recipe with her. I find that it's a fantastic way to get my family to eat cooked cabbage-it is hidden in Grandma's potatoes! -Marie Pagel, Lena, WI

I'm not sure if I'm doing something wrong, but my colcannon always turns out too watery. Any suggestions?

This is a great recipe to use up leftover mashed potatoes. I also like to add some shredded cheddar cheese to the top before baking.

I thought this recipe was just okay. The potatoes were a little bland and the cabbage was a bit tough. I think I would have liked it better if I had used more bacon and leeks.

This is the best colcannon recipe I've ever tried! The potatoes were fluffy and creamy, and the cabbage was perfectly cooked. I loved the addition of bacon and leeks, which gave the dish a really savory flavor.
