COD AU GRATIN image

2 tbsp (60 mL) flour1 tbsp (30 mL) flour1/2 tsp (5 mL) salt1/4 tsp (2 mL) pepper1/2 cup (250 mL) grated old Cheddar cheese1 cup (500 mL) 1% milk1/4 cup (125 mL) diced shallots5 1/4 cups (2.5 L) fresh cod fillets

Steps:

  • Make cheese sauce by, melting butter in microwave x 1 minute. Stir in flour and heat in microwave 1 minute ( to make roux ). Add salt & pepper. Add milk, stirring several times until thickened by short amounts of time in microwave. Cut cod fish into 1 inch chunks and cook carefully in the microwave with a 1/2 inch of water in a covered dish. Grease 2 quart casserole. Drain liquid from fish and add to casserole, add sauce and top with grated cheddar cheese. Sprinkle chopped fresh parsley on top. Bake 30 minutes in 350 F degree oven.
